		<item><title>Quest for quality </title><description>Solomon Tekelemariam, who has more than two years of coffee grading experience and is a Certified Q Grader (Coffee Quality Control) at the Ethiopian Commodity Exchange (ECX), is seen here testing the coffee sample at the ECX coffee testing laboratory. The graders at the ECX laboratory only receive the coffee samples in code so as to allow independent and unbiased evaluation. The coffee samples are evaluated for defects caused by insects and fungus on the raw beans, defects during slow roasting, and aroma when mixed with hot water. The coffee is then given a score on fragrance or aroma, flavour, acidity, body, and uniformity among other criteria. Forty per cent of the evaluation happens before roasting and the rest happens during and after roasting. Specialty coffee that scores 80 and above is eligible for Q Certification. The Coffee Quality Institute has been training 37 graders from the ECX who are now certified graders and cuppers.
